A Very Vegan Birthday Cake

Last week my gorgeous nephew turned One! We couldn’t believe how fast the year had passed by and how much he had achieved in that time! As his godmother I really wanted to mark this special occasion in a memorable way. So as well as some cute clothes, I made him a gorgeous photo book with pictures of all his firsts… everything from his first bath to his first time on a boat!

I also asked my sister if I could have the privilege of making his birthday cake!

I made two, one for the guests and one for the boy!

What you need:

1 Apple and 2 bananas

200g Coconut yogurt

1 tsp Vanilla extract

100g Coconut oil

200g Plain flour

100g Coconut sugar

85g Raw cacao

1 tsp Baking powder

What to do:

1. Peel the Apple and cut into chunks. Place into a blender with the bananas and blend.

2. Add the coconut yogurt, vanilla extract and melted coconut oil. Blend again.

3. Add the flour, raw cacao and coconut sugar. Guess what… Blend again!

4. Add 200mls hot water to the mixture.

This is your cake mix and can be poured into a lined or greased (with coconut oil) cake tin or muffin tray.

Bake in the oven for 40 mins or less for muffins, until a sharp knife comes out clean.

Next, we make the coconut topping and decorate the cake….

What you need:

320mls coconut cream

1/2 tsp vanilla extract

1 tbsp icing sugar

Fresh berries
What to do:

1. Spoon the coconut cream out of the tin or even better use a carton of actual coconut cream! ?

2. Add 1tbsp icing sugar, 1/2 tsp Vanilla extract and whisk together.

3. Leave in fridge up to an hour while the cake is cooking and cooling. This will allow it to get a little harder.

4. Smoother between the two layers as well as on top of your cake or cover the tops of the muffins with the coconut mixture. Decorate with fresh, washed berries.
